Mozzarella Focaccia Sandwiches
Preparation
Preheat the oven to 200oC, gas mark 6.
Spread the focaccia bases with pesto, top with the tomato and mozzarella and place on a baking tray with the focaccia lids to the side.
Bake for 5-6 minutes until the cheese starts to soften. Drizzle with oil and season. Sprinkle with cress and rocket and top with the focaccia lids to serve.
Tip
Try ciabatta rolls instead of focaccia or try sun dried tomato paste instead of the pesto.
