Marinated Mozzarella & Pasta Salad
Preparation
Cook the pasta in boiling water for 10-12 minutes until tender.
Meanwhile, mix together the pesto, vinegar and oil, season and stir in the mozzarella minis, then set aside.
Drain the pasta and cool then mix in the tomatoes, olives and mozzarella minis plus the marinade.
Reserve a few small basil leaves and shred the rest, stir the shredded basil into the pasta, season and serve scattered with the reserved basil leaves.
Tip
Try different flavoured pesto’s or add toasted pine nuts for extra taste. Great served hot too.
