Lamb Culet, Sweet Potato and Galbani Mozzarella Tray Bake
Preparation
Preheat your oven to 140°C.
Bring a large saucepan of salted water to a gentle boil. Add the peeled sweet potatoes and cook for 7-8 minutes.
When the potatoes are cooked, carefully drain them and place them in an oven proof dish with a small amount of olive oil. Add the lamb, chilies, rosemary, salt and pepper. Season well Cook in the oven for 20-25 minutes (or a little longer if you like your lamb well done).
Meanwhile, cut the Galbani Mozzarella Maxi into thin slices.
Carefully remove the oven proof dish from the oven. Place the Galbani Mozzarella Maxi slices on top and let it gently melt into the lamb and sweet potatoes. Serve.
