Galbani Mozzarella di Latte di Bufala Maxi and Ham Ballotines
Preparation
Gently wash the chives, so not to damage the strands.
Take the melon and cut it in half to remove the seeds in the centre.
Cut the melon into 12 thin slices (or as you wish depending on the number of people).
Using a knife, peel each of the previously cut slices.
Drain the Mozzarella di Latte di Bufala Maxi then cut into slices with the same amount of slices as there are melon slices. Finally cut the slices in half.
Place two pieces of Galbani Mozzarella di Latte di Bufala on top.
Prepare your bundle:
Place the strand of chive in the middle of your plate.
Place two pieces of Galbani Mozzarella on top.
Cover with a slice of dry cured ham and add a slice of melon on top.
Carefully tie the bundle together using strands of chive as shown in the photo above. Handle the chives as gently as possible in order not to break them.
Lightly season with salt and pepper. Serve!
