Ricotta
Ricotta’s origins
Originating from central and southern Italy, ricotta is a delicious creamy cheese made from whey. Its name comes from its manufacturing process: the whey from the production of cheese, which is cooked, then annealed (“ri-cotta” in Italian) then the curd is drained before being cooled.
Usage occasions
In Italy, ricotta is eaten both hot and cold as a substitute to cream for sweet and savoury dishes. Galbani Ricotta can be used to make starters, sauces, pasta and even desserts as it is perfect for cheesecake!
