Italian Hard Cheeses
Hard cheeses’ origins
Galbani Parmigiano Reggiano, Grana Padano and Pecorino Romano are PDO cheeses. The secret of PDO Italian hard cheeses is their maturation process but also the fact that they can only be made from milk sourced from protected designated geographical areas which give each PDO cheese it’s own unique characteristics.
However, they are differentiated by their production areas which are: The regions of Lombardy, Piedmont,Trentino, the province of Placentia in Emilia-Romagna, as well as a part of Veneto for the Grana Padano. The Parmigiano Reggiano has a more selective delimitation, namely the provinces of Parma, Reggio Emilia, Modena and Bologna South of the Po.
